Some facts about a favorite vegetable (it’s not a fruit!):
1) An ideal health food, because it doesn’t have any fat or cholesterol, is high in fiber and vitamins A & C, and is a great source of potassium;
2) Can quench inflammation that contributes to conditions like asthma, diabetes, colon cancer and arthritis;
3) Even the seeds and rinds are edible!
